First off, fresh truffle is a completely different beast to the chemical based aroma in truffle oil and many truffle products you’ll find on the shelves of good food stores and supermarkets. Real fresh black truffle is alive (say like a mushroom) and there’s a few basic principles to follow to bring out its best.
You don’t eat slices of truffle for flavour, rather it’s about an elusive almost addictive attack on the senses, that sets of endorphins that make you feel really good!
Pair it with dairy, and fat – think cream and butter, or a soft cheese like brie, or a creme anglaise if you want to go sweet. Use a microplane to grate it or a truffle shaver, as the volatiles are released when the truffle mixes with air.
And incorporate it and warm it through, and it will release more of it’s amazing scent, but not too much or it’ll kill the whole thing, and you’ll feel underwhelmed!. gentle warmth, is the way to go.
