Biodynamic/organic black truffle usually only available to Sydney’s top restaurants.
Each truffle is unique. It has its own story, position, and tree that it belongs with.
It’s taken about 10 months growing in the breathing, earthy space under one of our oak trees to ripen to the point where it volatiles are potent enough to attract us, or a myriad or insects to chew on it to help spread its spores.
It’s been found by Billy, a very clever and crazy Lab, and dug up by me (Gael), then cleaned and graded carefully following our organic certification standards, (using only sustainable products etc).
Hey, and just for fun, we’ll occasionally leave an odd bit of root attached, so you get the chance to feel the connection the truffle had with the tree it lived with.
Order by Friday COB – Harvested over the weekend and shipped to you express on Monday.
